Phil and Jenn Tolliver opened Smokehouse 52 BBQ in downtown Chelsea, MI in February of 2013, with plans to open another location in 2017, the second Smokehouse 52 BBQ will be in Saline, MI. But Phil’s passion for BBQ has been lifelong. Phil will tell you that he has had “a passion for BBQ as long as I can remember.”
Passion for BBQ
Growing up on a hog farm in Stockbridge, MI taught Phil many life lessons that have impacted his vision for his BBQ joints. Hard work, patience and a lot about hogs were just a few of those lessons. Later, when his passion for BBQ would not leave him alone, Phil reached out to the best there is, Mike “The Legend” Mills of the 17 th St. BBQ. Phil traveled south to work alongside Mike and learn his secrets and techniques to championship BBQ. When he returned home, Phil started to build Smokehouse 52 BBQ on Main Street in Chelsea combining his lessons from the farm with those of Mills.
BBQ is all about memories and for some, it’s a bit of a religion. Phil knew that in order to provide the best BBQ experience, everything had to be authentic. He wanted a BBQ joint that serves GREAT BBQ with friendly, professional service. He sought out authentic wood fired pits, barn beams, and great bourbon to help create a place where his guests would feel right at home. He developed regional sauces and side dishes to please a variety of BBQ tastes.
But, at the end of the day, we are in the hospitality business. Each and every day, we must commit ourselves to the relentless pursuit of doing the right things – not the easy things. We must provide our guests with the best service and experience, exceeding their expectations. This is what makes us great. This is what makes Smokehouse 52 BBQ the place to be.
